Cajun Pineapple Pork Tenderloin
Ingredients
1 lb pork tenderloin
2 tbsp Rub it Up Cajun Pineapple Blend
1 tbsp olive oil
1/4 cup pineapple juice
2 tbsp brown sugar
Salt and pepper to taste
Fresh parsley or thyme for garnish

Instructions
1. Preheat your oven to 400°F (200°C).
2. Rub the pork tenderloin with Rub it Up Cajun pineapple Blend, olive oil, salt, and pepper.
3. In a small bowl, mix the pineapple juice and brown sugar until the sugar dissolves.
4. Heat an oven-safe skillet over medium-high heat. Sear the pork tenderloin on all sides until browned, about 3-4 minutes per side.
5. Pour the pineapple juice and brown sugar mixture over the pork. Transfer the skillet to the oven and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
6. Let the pork rest for 5 minutes before slicing. Garnish with fresh herbs like parsley or thyme.
7. Serving suggestion: Serve with mashed potatoes or roasted vegetables for a comforting meal.
